Tilapia Tacos with mango salsa – daniel plan friendly

I love a good hearty stew or warm casserole the same as the next person… actually, that is a lie. I hate casseroles. BUT the point is, who doesn’t want warm and delicious hardy food this time of year? Z. that’s who. He is not a big fan of soups, stews, beans, or hardy dinners. So, even in the dead of winter, I have to find a way to bring in some summer food flavors. Like mango salsa…

One of my good to, super quick and easy dinners is fish tacos with mango salsa and homemade guac. I love making these sides together because it helps use of ingredients because who wants a half of a lime in your fridge?  Keep on reading for the delicious recipe.

Step 1 – start defrosting your fish

Step 2 – Dice half a mango and 1/8 to 1/4 a red onion. Mix together, add the juice of half a lime, and all spices. All done with that step.

Step 3 – slice avocado in half and scoop out the flesh into a bowl. Mash the avocado. Dice 1/4 a red onion and add to avocado. Add in the juice of half a lime and the spices. Mix together. Boom.

Step 4 – start warming up your griddle or skillet on medium heat.

Step 5 – spray the griddle with pam or lightly grease. When pan is hot, prepare to add the fish by removing any liquid from the fish and adding a light dusting of salt, pepper, and cumin. Place the seasoned side of the fish down and add the same spices to the upward facing side.

Step 6 – cook for 2-4 minutes on each side, depending on the size of your fish.

Step 7 – remove from heat and make your tacos. We sliced the fish in half so two fillets made for four tacos.

To make our meal more Daniel plan friendly, our tacos consisted on a corn tortilla, a layer of finely sliced cabbage, 1/2 the piece fish, and a spoonful of salsa and guac. We ate the rest of the guac with a sliced cucumber. At first you might miss the tortilla chips, but eventually, you learn to love the freshness from the cucumber.

Mango Salsa

½ mango, diced

1/8 red onion, diced

½ lime juiced

¼ tsp garlic salt

1/8 tsp cumin

Dash of fresh ground pepper.

Mix everything together…. That’s it. Easy peasy.

 

Guacamole

1 avocado, mashed

¼ red onion

½ lime juiced

¼ tsp paprika

1/8 tsp cumin

½ tsp garlic salt

Dash red pepper or half a jalepeno finely chopped
