Eggplant lasagna. If you haven’t tried all the various substitutes for lasagna noodles, you should. I salt my eggplant and then press all the water out. Pasta sauce, cottage cheese, and then covered in cheese.
Have you ever had those months where you endlessly crave something? The past few weeks, I cannot get enough Caesar salad. Z. makes the absolute best Caesar dressing, we top it with grilled chicken, fresh croutons, and shaved Parmesan cheese. So. Darn. good.
This set of holiday K-cups from Trader Joe’s is adding a little pep into my step. They are so yummy, yet manage to avoid tasting overly synthetic. Even the chocolate mint, which I find to be the easiest to taste fake. It is just nommy.
After returning from overindulging this thanksgiving, I have been craving real food… you know, the green variety and not covered in cheese or mushroom soup mix. My favorite lean protein is fish. Low calorie and high in protein. My favorite two ways to fix fish are to broil it will a citrus and some ginger, a little soy sauce or to fan fry it and make fish tacos with a mango salsa.
