Reporting back to you guys this week is going to be off. I lost my computer with this mostly written update, so my grocery list is going probably incorrect.
Actually, this week is off for many reasons. Last week I saw my cardiologist and he recommended three dietary changes. First, add a glass of Gatorade to my diet daily, two increase my sodium consumption, and three, add more protein to my breakfasts and lunches. At the same time, Z. informed me that he would mutiny if I gave him one more salad.
Also, I know I promised we don’t eat out all the time. Early this week doesn’t show that, but I truly promise we don’t eat out all the time.
We spent $30.35 at Kroger and $15.17 at Whole Foods.
What I got at Kroger: 2 large containers of Gatorade, 1 loaf of bread, 1 pound deli ham, head of romaine lettuce, family size bag of BBQ chips, 1 bunch of organic kale, 12 pack of canned Diet Dr. K, 2 zucchini, 1 bunch asparagus, 1 cucumber, Kroger brand cheddar cheese, 2 lbs onions, 3 limes, 1 dark chocolate Theo bar, 1 bunch bananas, and 2 frozen meals for Z.
Whole Foods: 3 bottles of wine, this awesome kombucha, and a jar of their house brand organic peanut butter.
Saturday – in the morning, I got up and made Z. and I poached eggs, roast asparagus, and toast. Lunch was kale and potato soup with baby carrots and cucumber with hummus. Dinner was with Z,’s parents to celebrate a late birthday.
Sunday – breakfast was toast and my Mom’s special elderberry jelly that was in our Christmas stockings. Then, I had a lunch meeting for work and Z. worked through lunch. For dinner, we went and tried a new (to us!) Indian restaurant.
For breakfasts this week, I had banana and spinach shakes with a scoop of peanut butter. Z had scrambled eggs. Lunches were a garden salad for me with kale and potato soup or leftovers. Z. had ham sandwiches and a bag of chips.
Monday – I call them Annabowls but they are quinoa black bean bowls with canned tuna, sauted asparagus, onion, and zucchini, topped with lettuce and a little cheese. It was delicious. We paired it with a classic maragarita. My bowl was inspired by this recipe, but didn’t actually follow it at all.
Tuesday – Curried Pollack (the recipe on the back of the Kroger bag), sauted zucchini with Italian herbs, roast asparagus, white rice, and a garden salad with homemade balsamic dressing.
Wednesday – Z. and I had an actual date. And we went to B-dubs because it was close and open.
Thursday – Puerto Rican style red beans and rice. I added a sweet potato, as well as the regular potato. I also burned this. A lot.
Friday – My own sweet and spicy Salmon recipe with homemade fried rice and roast asparagus.
